Brewing Method: Extract
Yeast: WLP001 California Ale (5 gals), WLP023 Burton Ale (5 gals)
Yeast Starter: None, but I should have.
Batch Size: 10 US Gallons
Original Gravity: ~1.079
Final Gravity: ~1.016
Alcohol Content: 6.8 volume %
Total Grains: 16 lbs Muntons Light Dry Extract
Color:
Extract Efficiency: %
Hop IBU's: 62
Boiling Time: 80 minutes
Primary Fermentation: 5 Days @ 70 F
Secondary Fermentation: 10 Days @ 70F
Additional Fermentation:

Grain Bill:

2 lbs CaraMunic (Dingemans)
2 lbs Aromatic (Dingemans)
2 lbs Biscuit (Dingemans)
1 lb CaraPils (Dingemans)
All cracked and steeped at 155 F for 1 hour.

Hop Bill:

4 oz 7.1%AA Northern Brewer (After hot break)
3 oz 5.4%AA Cascade (After hot break)
2 oz 4.2%AA Fuggles (Final 5 minutes)
1 oz 5.4%AA Cascade (Final 5 minutes)
1 oz 12.7%AA Nugget (Final 5 minutes)
2 oz 4.2%AA Fugggles (Final 1 minute)
1 oz 5.4%AA Cascade (Final 1 minute)
1 oz 12.7%AA Nugget (Final 1 minute)
3 oz 4.2%AA Fuggles (Dry, secondary fermenter)
2 oz 5.4%AA Cascade (Dry, secondary fermenter)
1 oz 12.7%AA Nugget (Dry, secondary fermenter)

Brewers Notes:

I used some Isinglass in the Burton Ale batch at the end of secondary fermentation to help it clear.

Both brews definitely improved after a month in the keg.

Although the hops were obviously present, the California Ale batch was too sweet and heavy for my taste. I wont use this yeast with such a high-gravity / high adjunct brew again.

The Burton Ale batch was excellent after a few weeks in the keg. The moderate estery flavors produced by this yeast helped balance the malty sweetness and lighten the overall character of the brew. Quite balanced and tasty. It's a big brew though. Drink more than 3 at your own risk.

In retrospect I should have made yeast starters for both batches, or doubled-up on the vials. Fermentation was slow to start and slow to finish.

Hazenhart IPA 1.2's currently fermenting. Will post recipe and results when it's done.

I love IPA.
